I've never tried a cheese-only version, but my instinct would be to up the cheese but not double. (Though if you have a deeper dish than I do, you might be able to get away with double- I know I'm right on the edge of mine as it is. The drip tray is a necessity, not a precaution!) Maybe 1.5x? make it 42-48 oz ricotta, 1.5 c of each of the shredded cheeses. Or you could keep 1 c each but add a third cheese. Not sure whether to call it 4 eggs or 5, though - it's not like 'half an egg' is a viable ingredient...Normally I'd volunteer to try it out, but I've still got most of a lasgana in the fridge!
When you say precooked, you mean you're going to cook them ahead of time, or 'oven ready'? The box instructions on the ones I use say it will work just fine 'oven ready' for wetter sauces, and I'm pretty sure there's enough liquid in this even without the meat that it should work. I'm just a big chicken and cook them a little to make sure! (The cooking doesn't actually add much to the time/effort - I start the water for them about the time I start getting everything else ready. I can dunk the first layer while mixing up the cheese bowl. After that, each set of noodles gets as much time as it takes me to assembly the layer before it. As soon as one layer of noodles comes out, I toss the next set in. None of them actually cook to 'eat right now' doneness.)
